If you have the time, taking extra days is well worthwhile. We used them to wander Siracusa, take in both interiors and exteriors in Noto, take a bus to Scili and walk in Pantalica. We also ate better than ever in Italy. Prices vary, but there are some superb restaurants. We particularly enjoyed Il Liberty in Noto, Bella Vita in Siracusa, Ciciulena in Catania. and in Ragusa, Quattro Gatti and Il Barocco. To watch the day pass in Catania, Gulen on the main piazza is great.
Difficult to say what wasn't a highlight! Loved the Valle dei Tempi, not just the ancient remains but also the wildflowers and general air of relaxation - away from the traffic! For similar reasons the Reserves of Vendicari and Pantalica and the pedestrian areas of Ortigia and Noto. There is nothing to equal Ortigia's Piazza Duomo in the early morning or during the evening "passegiatta".
We have a friend who has a holiday home in Ortigia who recommended the following restaurants and we found them both excellent for food and Sicilian ambience: (i) Tavernetta di Piero on Via Cavour - a small family run place, very popular, need to book. (ii) Osteria da Seby in via Mirabella. Also family run and very friendly but more stylish than Piero's. Very close to Algila Hotel (closed Mondays).
The friend also recommended a delightful walk on the slopes of Etna which is very convenient from Monaci delle Terre Nere: the Schiena dell’Asino trail. It’s easy to find from Zafferano Etnea - there is a small free car park at the start of the signed path about 2km east of the Rifugio Sapienza on the SP92. It passes through woodland up to meadows on the ridge with excellent views of the summit. The full circuit would be very demanding but it is possible to do a "there and back" walk with no difficulty.
