Italians call the Deep South il mezzogiorno  (midday), and Puglia – the ‘heel’ – has a special character that goes beyond the warming effects of the solleone (lion sun) that heats up the beaches, ripens the olives and adds power to the full-bodied, negroamaro wines. Flavours are fresh and bold, with a robust cuisine unafraid to draw on the riches of the land. The towns and villages, too, have a laid-back, unpretentious charm; and the landscapes, while little-known and even less frequently visited, have a colourful allure, from olive groves stretching out to a red-earthed horizon, to the honey-coloured coastline – riddled with caves and washed by the waves of an emerald sea.
