The location – perched high above the Inn Valley – is wonderful, and the facilities are first rate: there’s an indoor pool, sauna and spa, and the restaurant is highly regarded, too. Authentic regional and national specialities feature the freshest seasonal produce, often from the hotel’s own farm; and you won’t want to miss out on Kaffee und Kuchen – the ‘coffee (or tea!) and cake’ tradition that is such an enjoyable treat at any time of year.

A particularly distinctive variety of cake you will find here is Mohntorte ('poppy seed cake'), and the chef even makes subtle variations depending on the time of year. Sometimes he combines it with seasonal fruit such as apples or pears, and during the colder months he might serve it with a lukewarm zabaione sauce or a scoop of cinnamon ice-cream (or both!) for a spot of winter indulgence.

It’s true that Mohntorte might look a little unusual – perhaps even off-putting – at first, but once you get past the grey, mottled appearance (a bit like weathered slate), you are in for a real treat: its moist-yet-crunchy texture is perfectly complemented by a subtly tangy flavour. So either take a trip to the Inntalerhof to enjoy it on the terrace (gazing across at the Tyrolean mountains, as many guests love to do), or why not give it a try at home using the hotel’s own recipe?

INGREDIENTS:
280g butter
240g sugar
10 eggs (separated)
200g ground almonds
140g poppy seeds
1 ground lemon peel
1 teaspoon baking powder
Icing sugar
Whipped cream

METHOD:
1. Grind the poppy seeds as finely as possible. (This can be done in a blender or by using a pestle and mortar if no grinding machine is available.)
2. Mix the butter and half the sugar thoroughly until light, add each egg yolk and stir them.
3. Add the almonds, poppy seeds and lemon peel to the butter and sugar mixture, then stir.
4. Whip the egg whites with the rest of the sugar and fold it into the yolk-and-poppy-seed mixture.
5. Scrape the mixture into an 11-12 inch (28cm) baking tin, prepared by greasing with butter and dusting with baking powder.
6. Bake for 15 minutes at 190°C and then a further 45 minutes at 160°C.
7. Let it rest, then sift with icing sugar and serve with a generous dollop of whipped cream!
