Rick meets Chris

Iberico ham, SpainIn the fourth and final episode of Rick Stein's Spain on BBC2, Rick travelled through the Extremadura region, famous for pimentón (smoked hot Spanish paprika) and Spain's most celebrated ham, Iberico, before driving on to Spain's most romantic city, Seville.

As usual, he is at perfect ease meeting people from across the social spectrum, one minute eating lunch with an old man in his allotment hut, the next dining with a Marqués and Marquesa in their elegant country house.

All share Rick's love of growing, preparing, cooking and eating their own produce. And it shows...

Tapas in Seville
In this episode (which is repeated on Wednesday evening at 7.00pm on BBC2) he marvels at the 'fields of fire', bright red with chillies that are dried and smoked to create the quintessential flavour of Spain, pimentón. The chilli was introduced from the Americas by the Conquistadors, many of whom came from Extremadura. He meets the famous black pigs which dine on acorns to produce the even more famous Iberico ham. In Albuquerque, he visits the "Vatican of ham", a vast warehouse where 40,000 hams are drying, some for up to seven years. The total value is €8 million, with the best pieces selling for £3,000 in London!

In Seville, he pops into an authentic flamenco bar before going for tapas in his favourite restaurant, El Rinconcillo, founded in 1670 – which we mentioned in an earlier blog. Then, as a fitting finale, he heads to Las Alpujarras, south of Granada, to meet Chris and Annie Stewart – which is rather a coincidence, as we have just organised a walking holiday with author Chris later in the year.
