The heart of ‘Green Spain’
Collia is immersed in the rugged Sueve Natural Reserve on the western fringes of the Picos de Europa. Your base here is the welcoming Posada del Valle, where we include dinner on two nights, leaving you free on other nights to sample some of the area’s other restaurants, which include a Michelin-starred restaurant only 3km away. You will find vegetarians well-catered for wherever you choose to dine.

Your host is the enthusiastic Nigel Burch, an Englishman whose knowledge of his adopted region is unrivalled. With his wife, Joann, Nigel has created a charming small hotel from this hundred-year-old farmhouse and built up a loyal Spanish clientele for the restaurant too, which uses mainly local, organic ingredients, including vegetables and a rare breed of indigenous lamb produced on the hotel’s own 18-acre organic farm. In 2008, they won the Organic Food & Biodiversity Award from the Spanish Ministry of the Environment for their outstanding efforts in not only using organic produce in the hotel’s restaurant, but also in growing most of that food themselves on their farm.
The bedrooms are well equipped and comfortable and, like the lounge and dining room, offer outstanding views of the surrounding countryside. (For more space, upgrade to a larger room.) Terraces surrounded by ornamental plants where you can sit outside and admire the views complete the picture.

Intriguing Oviedo is a city of two distinct parts. The Old Quarter boasts an array of historic churches, splendid architecture, traditional cider houses and brightly painted houses in the narrow streets radiating out from the striking cathedral, while the early 20th-century New Town is brimming with fashionable boutiques and innovative eateries.
The Hotel Fruela's handsome late 19th-century façade belies a stylish, modern interior complemented by attentive service. Its location is ideal for exploring both the Old and New Towns.

Set on the curves of the River Nervión, gastronomic Bilbao is very striking, with green hills tumbling right into the city. You will love the friendly, easy-going atmosphere, and can while away your time strolling through the bustling Casco Viejo (Old Town), an attractive area lined with ancient mansions, small boutiques and wonderful tapas bars. Here, in contrast to the modern Guggenheim Museum, you find the old theatre, arcaded Plaza Nueva, and Gothic cathedral.
The welcoming Iturrienea Ostatua is a characterful pensión located right in the heart of the Casco Viejo. Great attention to detail has been paid to the decoration of the 21 bedrooms, most of which retain original features such as beams and exposed stonework. For a 2-star establishment, the facilities are remarkably good, and include room service. In good weather, breakfast can be served in the small garden.
