  About Mallorca >Mallorca is distinctly Mediterranean in character, both in its ways of life and its landscapes. What is most astonishing is the variety of scenery on such a relatively small island. At its heart lies a gently rolling plain whose almond groves provide a beautiful display of blossom each spring. This is bordered to the south and east by the hills which frame the island’s rugged, lesser-known coastline, while to the north rises the Tramuntana Sierra, whose craggy limestone peaks plunge into the sea. Aleppo pines, holm oaks, olives, carob and orange trees predominate, the latter bearing their main crop in January. The island’s gastronomy is excellent, the sea providing a range of fish – one of the most popular of which is sea-bass, sometimes baked in rock-salt – and seafood. Savour dishes such as caldereta de sambfaina, a lobster casserole; sopa mallorquina, made with bread, garlic and leeks; the ratatouille-style tumbet; and llom amb col – pork and pine nuts wrapped in cabbage leaves.
